Vegan peanut butter cookie batter bliss balls

This is hands-down the best kitchen accident I’ve ever had. Ever.

A few weeks back, while cooking up a storm for my 30th birthday party, I decided to make the peanut butter cookie part of this peanut butter and salted caramel sandwiches recipe, featured over at Vegan Miam’s incredible blog.

One quick batter test later and I realised this had peanuty bliss ball goodness written all over it.

I tweaked the recipe a bit and here we are. A vegan and refined-sugar-free gift for you, which takes less than 15 minutes to whip up and requires absolutely zero cooking. In fact, you really only need one bowl and one spoon for these peanut butter bliss balls. Magic, huh?

Vegan and refined-sugar-free peanut butter bliss balls

Ingredients:

Makes about 15 bliss balls.

1 cup oat flour (or about 1½ cups of whole oats, whizzed in a food processor first)
½ cup peanut butter
⅓ cup agave syrup
2 tablespoon coconut oil
2 teaspoon vanilla extract
A pinch of salt

Method:

Dump everything in a medium-sized mixing bowl. Mix together well using a tablespoon. The mixture should be really thick and lumpy and almost difficult to mix through – basically the opposite of a batter.

Roll into small bite-sized balls using about a tablespoon of the mixture. Place in the fridge for about half an hour to harden. Enjoy!

      Oh, I know. I’m so obsessed with peanut butter! I think celery and PB is my fave combo, though straight out of the jar with a spoon is pretty good, too! :)
